Gluten Free Breakfast Recipe

Blueberry Coffee Cake
Source: Elana Amsterdam, Paleo Cooking Book
Serves: 8

Cake: 
2 cups blanched almond flour
1/4 teaspoon baking soda
1/4 teaspoon sea salt
4 large eggs
1/4 Spectrum all- vegetable (I didn't have it so I used 1/4 cup melted butter)
1/4 cup coconut sugar
1 tbsp vanilla extract
1/2 cup frozen blueberries

Optional: 1/4 cup unsweetened almond milk (my tip)

Combine a bowl the dry ingredients, and in another bowl the wet ingredients (whisk the eggs first).
Then add the wet ingredients to the dry until combined smoothly.
I added 1/4 cup of unsweetened almond milk, so that the batter can be smoother.
Then add the frozen blueberries and stir well into the batter.

Topping

1/4 cup Stepctrum all-vegetable shortening
1/4 cup coconut sugar
1/2 blanched almond flour
1 tbsp ground cinamon 
I used the 1/4 cup melted butter instead of shortening.
Add the batter to the cake pan and add the topping over the cake batter. Put in the oven
350 degrees for 30 to 40 minutes.
I love the recipe, the only thing is that it is about 350 calories per piece.
Watch out you don't over it!

Dessert: Chocolate Zucchini Bunt Cake

I saw this recipe online, it looked very good so I had to try it because when I am in the mood for sweets I have to make something happen lol. So I used the ingredients I had in my pantry already.

2 cups of finely grated zucchini 
After grating the zucchini add salt, place on sieve, mix both and let the water drain for about 
an hour. After the hour, squeeze as much water left as possible and put aside.
In a medium bowl mix all the dry ingredients: 2 cups of almond flour, 1/2 cup of cocoa powder,
1/3 cup of soy flour, 1/3 cup of unflavored whey protein powder, 1 tbsp baking powder, 1 1/2 tsp 
of cinnamon, 1/2 xanthan gum.
Beat 1/2 cup of butter with 2/3 cup of Truvia Baking Blend, until it is smoothly combined.
Then beat in 4 eggs, zucchini, and 1tsp vanilla extract.
Then add half of the dry ingredients, add 1/3 cup almond milk, and then add the rest of dry
Ingredients. Beat all together until well combined.
Spread batter into pan and put in 325 degrees oven for 45 minutes. 
Then make the glaze, melt one stick of butter, 2 oz of chocolate, 3 tsp truvia baking blend,
And 1/4 cup of cocoa powder.
Pour glaze on top of chocolate and spread evenly.
Time to eat!

Empanadas to celebrate Chile's Independence day!

As soon as Oscar found out his mom was making empanadas he wanted her to make it with lard instead of vegetable shortening. So making lard was his contribution to this recipe :)
First we bought pork fat and asked the butcher to grind it
Then put it in the crock pot
Strain through cheesecloth 
Store overnight
End product, it is so white, whiter than the picture
"Pino"
"Masa"
So pretty!

Time to eat! It is soooooo gooooood :) 










Bike route

Today we rode 10 miles, the day was beautiful and we biked for a longer distance.
First from Briarwood to Flushing Meadow Park (to the world sphere)
Then from Flushing Meadow park to Kissena Park
And finally from Kissena Park back to Briarwood.

We rode for about 1 hr and 15 minutes. It was a lovely day in the high 60's. :)

Lunch at Fu Run restaurant at Downtown Flushing

I was in the mood for some lamb, so Oscar was searching around and 
we found a place kinda nearby and has great reviews on their lamb.

So my mouth watered and off we went :) when we arrived we saw it had a 
B rating of  the plate I wanted which is the Muslim Lamb, and I was kinda 
discourage of being there. However I tried to keep a positive attitude and 
ordered it regardless, Oscar changed his mind and ordered something else.

This is what we ordered 

Muslim lamb, it was so good, I was really happy I took the courage to try something 
completely different even though It didn't look appealing to me at first. I would try it again :)
Oscar's plate was pork with mushroom, it was very good as well. The waitress asked 
if we wanted to try their nativeChinese mushroom or just regular one, so Oscar decided 
from their native one, and it was very good. It looks different and it tastes very woody, 
the combination was great and along some rice (which we don't eat) would have been 
even better.
Kind of confuse of my decision before trying it, as you can tell, but it was very good.
It is  very fatty, so it has a buttery taste which I love, and LOTS of condiments, 
I couldn't eat all of the seasoning on top, because my stomach is 
sensitive but the meat had great flavor even without it.
Oscar is wishing for some rice lol He loves Chinese food :)

We accompanied our dishes with string beans, and they were very tasty as well,
it had been roasted with garlic but I believe it had a little bit of soy sauce and it was yummy :)

Sister Dean

Today we said good bye to sister Dean :( She has been a wonderful sister missionary at Flushing I for six months! She is so positive, happy and multi-talented. We wish her all the best in her new area and other areas to come and a successful mission overall. We will miss you very much!
This is the sweet note she wrote to me :)

Flaxseed pancakes

Saturday morning breakfast:

1 cup of golden flaxseed
3 tsp Truvia baking blend 
1 tbsp coconut flour
1 tsp baking powder
1/2 tsp ground cinnamon
Pinch salt

4 eggs
1/4 cup coconut oil
1/2 almond milk

Whisk together all dry ingredients and then add each wet ingredient and mix well. Use a 1/4 cup of batter for each pancake. It makes 8 pancakes. 
We topped it off with Sugar Free Apricot Jelly, and whip cream :)

Fish day

We went to fishing at the Captreee Princess Boat. It was a cloudy and a little rainy day but once we went out on the ocean the sky cleared up and it turned out to be a beautiful day :)
I caught my very first blue fish. (Those sneakers are my fish sneakers lol)
Oscar got a couple of crabs by accident and we decided to keep them.
I finally can't a keeper, the biggest fish on the boat and I won the boat poll :)
Therefore we decided to eat fish for dinner :)
We bought a couple more of crabs once we got back to Queens, and we made the crab stock from scratch.
We made yummy Crab Bisque!
